Modified Atmosphere packaging
The modified air method is used to increase the shelf-life and maintain the quality of the packaged foodstuff. In this method, three gas oxygen, nitrogen and carbon dioxide are combined with a specific ratio and inject as protective gas into the food packaging.
The gases used in this method are oxygen, nitrogen and carbon dioxide, which are also present in normal air, but combine in this way with different.
In the modified air method, percentages will depended on the packaging product. It is also important to note that the variety of a product also changes the percentage of gas mixed. For example, the percentage of modified air for apples of a varity is different from the others. Usually a laboratory study can provide the best percentage for a particular product.
